The starting point for our two-ingredient, single-origin India bars is premium cacao grown by the wonderful people at Anamalai Farm. Located in the foothills of the Western Ghats, in a region renowned for its coconut farms, the team at Anamali relies on intercropping, drip irrigation, composting, and a small herd of cows to keep their soil healthy and their cocoa trees producing. They are committed to producing their cocoa in a way that it is both ethical and sustainable, and their practices result in larger yields, more frequent harvests, and a bean with a truly unique flavor profile.
We work through a wholesaler to purchase their beans and support their wonderful mission. We then sort, roast, grind, winnow, conch, refine, temper, mold, and wrap each batch of bars by hand. We use pure organic cane sugar to compliment the tartness of the beans and add balance. These bars are our most unique offering and a prime example of the variety of flavors and characteristics that can be found in cacao.
